One pot spicy sausage recipe!

My husband and I LOVE our spicy food. We probably eat something with the heat at least 5 times a week. It is always our go-to when we are planning out our meals. My favorite spicy spice blend is Mrs. Dash Extra Spicy Seasoning. I add it to literally e v e r y t h i n g. I got into more about why Mrs. Dash seasonings are the bomb in this post.
We love cooking together and this is one of our favorite dinners to cook. It is easy, quick and so so good! With prep and cook time, it takes only about 15 minutes. I mean, who doesn’t love quick, easy and DELICIOUS dinners? Plus everything goes in ONE pan so clean up is easy-peasy!
Mmmm… smoked sausage. I love using smoked sausage because the flavor is so good and you can use it in so many different ways! My favorite smoked sausage to buy is Eckrich Skinless Smoked Sausage. It has the best flavor and is so quick to cook up for an endless amount of meals.
This dinner was something I just threw together one day. We were unpacking our last home and everything was more chaotic than normal. I was searching our fridge and pantry to see what we had unpacked and found these simple ingredients. Threw them all together and we were hooked! It really is that good and that simple!
How to make the Spicy Sausage Rice
The first step is to add a little bit of olive oil in the pan on medium-high heat until it started smoking. Next, add the sausage and cook to your desired liking. We like ours extra well done because I feel like it just gives it so much more flavor and that crisp you’re looking for. It tastes so so good that way!
Seasoning
The next step you can use any of these three things: 1. use fresh white onion 2. use frozen onion or 3. using onion powder. It tastes incredible with any but if you have onion powder instead of onions on hand, there really is no need to rush out to the store. It tastes so good with any! Just throw it in with the sausage and cook for about 2-4 minutes if using fresh or frozen onions. Only about 30 seconds if using the onion powder. Next add in the garlic, extra spicy seasoning and salt. Cook for another 30 seconds to 1 minute until you smell the delicious fragrance.
Ro*Tel
Next, add in one can of Ro*Tel (No need to drain!) We have made it with both the mild and the hot. We love the way the hot adds that extra kick but if you want it a little tamer then use the mild. Either way, it tastes so good! We usually use Uncle Ben’s ready Spanish rice. It takes 90 seconds in the microwave and is so good in this dish. We have made our own Spanish rice and either way honestly tastes just as good. We just love the ease of having the 90-second kind especially with 4 kids running around constantly. We just throw it in with the sausage and Ro*Tel and mix it all together.
Top it with a handful of Monterey Jack and you have a perfect quick dinner!
Spicy Sausage Rice
Ingredients:
- 14oz Eckrich Skinless Smoked Sausage
- 2 Tbls onion powder or 1/4 cup fresh/frozen red onion
- 1 Tbls garlic
- 1 can of Ro*Tel hot or mild
- 1 package Uncle Ben’s Spanish Rice
- Mrs. Dash Extra Spicy Seasoning (season to your liking! We like to add a LOT)
Instructions:
- Add olive oil to your skillet over medium high heat until just smoking. Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and the extra spicy seasoning cook until fragrant, about 30 seconds.
- Add in the Ro*Tel and cook until most of the water is gone, about 3-5 minutes. Cook the Spanish Rice while waiting.
- Add in the Spanish Rice, stir until thoroughly combined.
- Top with Monterey Jack cheese
